The driving is easier than the crowded interstates around here. Personally, I'd catch a direct train to Caen. Get away from the city by low stress train trip and rent in smaller towns or at CDG, with the understanding that you will NOT be driving within the city proper. The only thing I'd be wary of in your stated itinerary is what time of day you're returning to Paris. Drop-off is often at one of the parking garages around Gare Montparnasse so pretty easy.
Go beyond Paris, the Alps, the Loire chateaux and the French Riviera. (And Rouen is worth a few hours, too.). I have booked a hotel for Monday night on MSM and would like to plan on taking the train from Rennes back to Paris on Tuesday. If you buy a 10- or 11-euro non-exchangeable ticket and miss that particular train, you'll have lost that money. Paris is about 225 miles or 362 kilometers from Mont-Saint-Michel, so it’s not going to be a short trip, but it will be worth it.
